  1. Peel and core apples, then finely chop flesh. melt butter in large frying pan and cook apple, stirring occasionally for about 15mins, or until browned lightly.
  2. Add maple syrup, sugar and spice. Cook, stirring for about 5 mins, or until liquid boils and caramelizes. Transfer mixture to a medium heatproof bowl then stir in sultanas and nuts. Cool for 20 mins.
  3. Meanwhile preheat oven to 220deg Celsius (or 200deg fan)
  4. Divide pastry sheets into 6 squares and spoon approx 1/4 cup apple and sultana mixture onto each sheet. With each square, fold pastry from corner to corner to create a triangle shape and press edges together with a fork to seal. When done, brush the top of pastries with beaten egg using a pastry brush.
  5. Bake parcels for about 20 mins or until golden. Dust with sifted icing sugar (confectionery sugar) and serve with ice cream

The crumble topping can be used with any fruit filling, though. Salt is essential to the flavour of the mix, so don't be shy with it.
