  3. Add everything in a baketray and add 1 table spoon of coconut oil and the curry powder + turmeric + salt & pepper. Hustle and put in the oven for 25 min
  4. Add 0.5 table spoon oil in a deep pan, and fry the coriander seed + cumin seeds.
  5. After 2 minutes (and the seeds begin to pop) add cut onion + garlic (in small pieces).
  6. After 5-10 minutes (when onion is soft) add the coconut milk and put on low heat. Wait 10-15 minutes, then check the oven, if the veggies + tofu are well baked (soft/crispy on the outside) add them in the pan and cook together for 5 more minutes
  7. Drain the rice and serve all together - bon appetite :)
  8. Add fresh cut coriander (as in the picture) as finishing touch !

You can omit the lemon juice. It's a flavorful Indian curry recipe that's vegetarian, vegan and gluten free.
