I usually prepare a South Indian version of roasted cauliflower using spices like Sambar powder and turmeric. Cauliflower and tofu is roasted in the oven with mild seasoning of Indian spices transforming a simple curry into an exotic. This vegan cauliflower and potato aloo gobi is indeed an easy version of this traditional Indian dish, but do make sure you have all the Indian spices on hand — including garam masala, chili powder, turmeric, and cumin — before you try this cauliflower curry recipe.

- Chop the cauliflower, pepper, tofu in big pieces, Clean the mange tout. Put the oven on 180degrees.
- Put up rice (brown rice is my favourite - takes 30-45 min to cook depending on the rice you use)
- Add everything in a baketray and add 1 table spoon of coconut oil and the curry powder + turmeric + salt & pepper. Hustle and put in the oven for 25 min
- Add 0.5 table spoon oil in a deep pan, and fry the coriander seed + cumin seeds.
- After 2 minutes (and the seeds begin to pop) add cut onion + garlic (in small pieces).
- After 5-10 minutes (when onion is soft) add the coconut milk and put on low heat. Wait 10-15 minutes, then check the oven, if the veggies + tofu are well baked (soft/crispy on the outside) add them in the pan and cook together for 5 more minutes
- Drain the rice and serve all together - bon appetite :)
- Add fresh cut coriander (as in the picture) as finishing touch !
You can omit the lemon juice. It's a flavorful Indian curry recipe that's vegetarian, vegan and gluten free. In this case, the rich curry sauce provides a beautiful blanket to coat the tofu and give it a bit of pizzazz. When blended, silken tofu adds a rich, creamy texture to desserts and smoothies.
