  3. To the mashed potatoes, add the previously made mixture (in step 1) and mix well.
  4. Cut the tops of the capsicums and de seed them. Stuff the potato mixture into the capsicum cups and arrange them on a baking tray. Bake for ten minutes (or till the tops turn golden brown)
  5. Take them out of the oven and garnish with chopped tomatoes and serve :)
